Poppyseed Chicken

If you are from the south, or have ever had a baby, or had a family member die, or have gone to a church potluck -you have probably had or made poppy seed chicken. But in case you haven't - I thought I would share the recipe. There are lots of versions - but this is the one I use:

Poppy seed chicken

2 or 3 chicken breasts, boiled and cut in small pieces
1 16 oz sour cream
2 cans cream of chicken
2 tbls of poppyseeds (I don't measure - I just shake a ton in)
Ritz crackers
1 stick of butter

Mix the first 4 ingredients and put in a baking dish. Cover with crushed up ritz crackers. Melt a stick of butter and pour on top. Bake for 20-30 minutes at 350.
I serve mine over rice. This is SUCH a good comfort food!!!!

I love poppy seed chicken! But Hayden thinks it's too "plain" so we add mushrooms and sometimes peas. Weird I know :)

One of my families favorites! We add 1/4 cup of blanched slivered almonds... yummo!!!!

Just clicked over here from your other blog because I'm always looking for easy recipes :o) I have never heard of Poppyseed Chicken, but it sure does sound yummy. It also seems like a recipe that could be "downsized" which is nice because I'm just one person and cannot bring myself to eat the same thing for three days in a row! I'm excited to see what other yummy recipes I will find here :o)

This has been a go to recipe in our family for years! I always take this to people when I am helping out for meals and it is a hit! I have never tried it over rice though, will have to check that out! I can't believe you have two sites, I can barely keep up with my meager blog!

So made this for the whole fam last night and my husband told me if we ate yummy things like we have all week ( all your recipes i might add) that he'd never want to go out to eat! i said.. so does that mean my other cooking has been terrible? Lol- i'm sure he meant the best. This was so yummy -

I have this recipe as well but mine calls for oriental or fried rice flavored Rice A Roni mix. You prepare it according to the box directions, then place it in the bottom of the 13x9 pan, then add to it the rest of the recipe that you have. Makes it an even simpler one dish meal. Enjoy!

Hi Kelly, I have been reading your blog for awhile...I made this poppyseed chicken tonight....YUMMY!! We are in Florida and have never had it, but obviously we have been deprived! I have also made the little meat cupcakes, which my kids are getting again for April "fool's Day dinner tomorrow and the chicken, green beans and potatoes...you are my new Allrecipes.com!!!

I just made this tonight. My husband couldn't find poppyseed at our store so we just did without. It was still delicious! I love all your recipes, can't wait for more!

Hi Kelly! This is a old favorite family recipe! We have many pictures of me eating this in my high chair! We call it ritz chicken and add peas and carrots instead of poppyseeds but it is just the same!

Our church serves dinner each Wed. night before church and this is one of the regular dishes that they make. You can tell it is a favorite among all of us because they usually run out and the fellowship hall is packed! I made it a couple of weeks ago and it had to be poppyseed"less" chicken because I had no poppy seeds...but it still turned out fantastic!! A classic comfort food!

I have been eying this recipe for a while now and was just waiting for perfect occasion. Made it last night(btw we used 2 sticks of butter) It was a hit!! Every bite was eaten, My daughter ate more than anybody!! Thanks for sharing.

Made this for the first time this week. A tip for ladies who like to keep things REALLY SIMPLE: I used 3 cans of Tyson Chunk White Chicken instead of boiling breasts and shredding etc. It still turns out really good, and saves a lot of time! Also served over angel hair pasta b/c we like to eat everything over pasta at our house!!! Angie

I make this same recipe too, except I add 8 oz. of shredded Monterrey Jack...gives it a nice kick and some gooeyness!

I make this meal all the time for my family only w/out the poppy seeds... We call it "Chicken Ritz". I got the recipe from my old roommate and it's a family favorite!

I love this recipe!! My husband and I had never had it until I found it on your blog! Yummmm!! Do you think this could be a freezer recipe? We are always looking for meals to make ahead of time because of the weird hours we work!! Either way, this is a fantastic dish!!

I made this dish recently and OMG...it was a HUGE hit in my family. I too used 3 cans of Tyson chicken in a can to save time and it worked out perfect! It froze great in order to reheat again for more meals...it was the best comfort food I've made in a long, long while! Thanks Kelly, your blog and recipes are one of my favorites!!!
